Yazd City Of The Delicious Food

Gheymeh Yazdi 

One of the most famous traditional dishes of Yazd province is Gheymeh Yazdi. It is a kind of stew made of chickpeas with a different taste from the ordinary Gheymeh that is served all over Iran. People of Yazd prepare their especial traditional Gheymeh using lamb, chickpeas, tomato paste, saffron, dried lime, onions and seasonings especially cinnamon. You can find this traditional dish in most traditional restaurants in Yazd.

Khoresht Beh Aloo (Quince and Plum Stew)

Another local cuisine of Yazd that should be noted is the delicious quince and plum stew which is known as Khoresht Beh Aloo in Persian. Taste quince and plum stew and enjoy its interesting sweet-and-sour combination taste of quince and plum. This delicious food with pleasant aroma is made of ingredients such as plum, quince, split peas, lamb, oil, Saffron, tomato paste, onions and seasonings especially lemon juice, ginger and sugar.

 

Pumpkin Stew (Ghalieh Kadoo)

Pumpkin Stew is a popular traditional food of Yazd which is an Anti-cancer food due to vitamins such as E and C and antioxidants in it. Ghalieh-ye Kadoo is also very useful to cure cold and flu. The ingredients include pumpkin, mung bean, red beans, oil, onions, walnuts, coconut powder and seasonings especially cinnamon and sugar. 

Generally, Koofteh is a kind of meatball which is a traditional dish of Iran and is cooked in different ways with different ingredients in various cities and regions. Locals in Yazd make some kinds of Koofteh which will be explained shortly below.

Koofteh Lappe

Koofte lappe (split peas meatballs) is another popular traditional cuisine of Yazd which is quite different from Koofteh Tabrizi which is more well-known. To make Koofteh lappe, you need split peas, minced lamb, barberry, raw and cooked eggs, fried onion, tomato paste, and seasonings.

 

Koofteh Yazdi or Koofteh Nokhod

Among the traditional Yazdi dishes you should try, Koofteh Yazdi or Koofte Nokhod is very popular. This delicious meal is prepared in the traditional restaurants in Yazd and the ingredients are minced lamb, chickpea flour, onion, aromatic herbs such as parsley and Iranian leek and seasonings.

 

Abgoosht (tomato and eggplant broth)

Abgoosht is a popular Persian dish that is favored by travelers and tourists, too. If this traditional food is cooked off eggplant, lamb, split peas, potatoes, unripe grape, tomato and seasonings, it is known as Goje-bademjoon Abgoosht (tomato and eggplant broth) which is a local food in Yazd. Basically, with this fatty and delicious food, bread, yogurt, vegetables and all kinds of pickles are desired.

Gippa

Gippa is one of the traditional foods which is also cooked in the other central cities of Iran. To prepare this meal, you need to cook rice, split peas, lentils, sour cherry powder or barberry and onion in cleaned tripe soaked in Kale Pache.
